Healthy Living... Healthy Habits

Double Crisp Bumbleberry

Gardening is a great activity that is good for the mind, body and soul. This summer use fruit grown in your garden or from a local farmer's market and try this recipe submitted by member Lori Stickland.

1 cup all purpose flour
1/2 tsp cinnamon
1 cup rolled oats
1/2 tsp nutmeg
3/4 cup packed brown sugar
1/2 cup butter

Mix all ingredients in a bowl.
Press half of the mixture in the bottom of an 8 X 8 square pan that has been lined with parchment paper.

Sauce:
3/4 cup sugar
1 cup cold water
2 Tbsp cornstarch
1 tsp orange rind

Place in a sauce pan and cook until thickened and sauce is clear

1 1/2 cups chopped rhubarb
1 cup peeled and chopped apples
1 cup sliced strawberries
1 cup blueberries

Mix fruit together and arrange on the base. Pour the sauce over the fruit
and sprinkle with remaining oatmeal mixture. Bake at 350 F for 50-60
minutes

Fran's Favourite Vegetable Cheese Soup

1 Large bag of frozen vegetables (Broccoli,
Cauliflower, Carrot medley)
Chicken boullion
Cheez Whiz
Shredded Cheese (for topping)

Empty vegetables into a large pot filled with enough water to cover them. Add 2 scoops of chicken boullion and boil until the vegetables are soft. Mash or blend the vegetables in the food processor. Return the vegetables to the pot; bring to a boil and stir in a 1/2 cup of
Cheez Whiz. Cook on low until ready to serve. Garnish with shredded cheese.

TIP: Don't overexpose your skin to the winter weather this year. Wind and cold can be damaging. When venturing outside, bundle up and wear a hat, mittens and scarf made of a breathable natural fabric such as cotton, silk or cashmere. Your skin will thank you.

Beat the heat with our Credit Union Smoothie!

1 cup berries...sliced strawberries, raspberries, blueberries, or a mix.
2 cups of low-fat frozen yogurt or vanilla ice cream
1/2 cup vanilla yogurt
1/4 tsp almond extract
(Makes 2 Shakes)

Put 2 tall glasses (that hold at least 1 cup each) in freezer to chill.
Place ice cream, yogurt and almond extract in a blender.
Pulse until mixed. Pour about a third into each glass.
Add berries to the remaining mixture in blender. Whirl until fairly smooth.
Pour over the first layer of the shakes
Garnish with more berries... ENJOY!

Credit Union Veggie Wrap

Large tortilla
Cream cheese, plain or flavoured
Thinly sliced red, green, & yellow peppers
Shredded carrots
Shredded cheddar cheese
Baby spinach leaves
Salt & pepper to taste

Spread cream cheese on tortilla. Arrange the filling ingredients,
cover with spinach. Roll tortilla & wrap it to go!
